No-Beer Fish and Chips

This fish-and-chips recipe uses no beer or soda, but instead uses baking powder in the batter to make it light and fluffy. Approximate time required: 2 1/2 - 3 hours.

Ingredients

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • 2 teaspoons of old-bay seasoning (optional)

  • 3 tablespoons of cornstarch

  • 1 egg

  • 1 cup milk

  • 4 large potatoes cut into strips, peeled if you prefer

  • 1 quart vegetable oil for frying

  • 1 1/2 pounds cod fillets (tilapia is okay too)

Directions

  • Cut up the potatoes into strips and place in a bowl of cold water to avoid oxidation

  • In a mixing bowl, add flour, baking powder, old-bay seasoning, salt and pepper

  • Beat the egg in a small bowl with a fork and add it to the mixing bowl

  • Add the milk and stir till the mixture is smooth

  • Preheat the oil in a pot till it is hot enough to quickly cook, but not too hot to burn

  • Take the cut potatoes out of the water and dry them with a towel

  • Lightly coat the cut potatoes in cornstarch to make it crispy and dry the potatoes further

  • Fry potatoes in the hot oil till they are tender, and dry them on a paper towel

  • Fry the potatoes again for a minute or two for added crispness

  • Salt and toss the fried potato strips

  • Dredge the fish fillets in batter and fry in hot oil till golden brown

  • Splash a touch of vinegar on the fried fish, sprinkle with salt and serve with a side of ranch as dipping sauce
